Church Food!

This is what my 2yr old Sous chef was doing....
Silly decorations!
Souffle Roulade. Cream cheese with saute of mushrooms, onions, red bells, garlic, spinach and ham.
This will be offered along with fresh salsa.
Bacon, onion, cheese biscuits....recipe from Pioneer Woman.
These will be warmed and offered with butter!
Pineapple, banana, orange, cherry, lime juice and fresh mint.
This salad will be paired with Vanilla yogurt.

This mostly kept me and a two year old precious little boy busy all day.
Little boys love to use power tools in the kitchen.
The cuisinart and the Kitchenaid mixer have Big Engines!!!!
...just got to watch out for little hands.
...and we made pasghetti for dinner!
Shang Hai sat under the Sous Chef and had lots of pasghetti also!

Grilled chicken with Pineapple Mango Salsa, Sides and Peach Pie!

Start off with cleaning up a Pineapple...
Wait, cute guy on tractor....sorry, sidetracked for a moment!
Yeah, cleaning up that pineapple!
Add some Mango and limes.
ok.
This is from Tractor Guys Garden.
Add Jalapenos and we are going to roast those Pasillas.
See?! Do it in the oven and then stuff them into a bag to steam for a bit.
Add some cucumbers also.
and avocados. I also added yellow bells.
...and cilantro, of course!
No real recipe here, just whatever feels good.

I have two cats on the Roof.
Salsa Baby!

Parboil to facilitate Peel Removal.
Slice and lightly season with allspice, cloves or cinnamon. Sugar if needed. These did not.
Crust.
I use all butter. Since this is going to be a double crust, I use 2 1/4 C. flour to 1/2 C. butter.
Ice cold water drop by drop.
Getting there.
Shape into two flattened balls.



Wrap and Frig for 45 to an Hour.

I lost my poor meatball

When somebody sneezed.

It rolled off the table

And onto the floor,

And then my poor meatball

Rolled right out the door!



It rolled in a garden

And under a bush

Now my poor meatball

Was nothing but mush



The mush was as tasty

As tasty could be

Early next summer

It grew into a tree



The tree was all covered

With beautiful moss

It grew lovely meatballs

In a tomato sauce



So if you like spaghetti

All covered with cheese

Hold on to your meatballs

And DON'T EVER SNEEZE!

Gold in them there hills Roulade and Italian fried Corn on the Cob!

I decided to make something with Ingredients At Hand!
First you must line a jelly roll pan with butter and parchment paper...or wax paper...having none of the above, a paper bag will do in a pinch. Butter said paper bag also...and flour as well.

Separate 5 eggs....beat up the yolks.
Oh, you want to know what we are making?!
A Roulade.

Sort of a souffle...but a bit flatter! You need to make a bechamel sauce and then you add a few of the yolks to the hot sauce and then you add the sauce to all of the eggs. They don't get along very well otherwise. You know...sort of like getting yourself into hot water!
Then you beat those egg whites into submission, ie, soft hills, and stir 1/4 of them into egg yolk bechamel mix and then fold, gently fold the rest of the whites into the mis.

Pour out this loving stuff onto prepped jelly roll pan.
400 oven and good to go for about 15 min.
Pull out and let rest.

Meanwhile, shred some zucchini, yummy for Darch!, and Crooknecks! Let Macerate...thought of doing that to Darch many times...adding a bit of salt and let it stand there and cry for a while!

Roulade out of oven....oh, forgot to tell you that you need to fold 1/4 c. parmesan into the mix and lay 1/4 c. of that salty wonderful stuff on top before baking. Must be fresh grated Reggiano, please!

Get yourself a clean dishtowel and dump squash.

...and squeeze.

Completely dry, it must be.

Dump into a butter and onion saute that you have going....

This is what it should end up looking like...add some herbs or garlic.

 
Spread the mixture onto souffle roulade...I mixed some jalapeno jack into this. Make recipes your own!
